2. Whisk granulated sugar, cornstarch, and salt in a large bowl. Add strawberries and vanilla extract, and stir to combine. Transfer to a lightly greased 13- x 9-inch baking dish.
3. Drop large spoonfuls of dough over strawberries; sprinkle evenly with turbinado. Bake in preheated oven until top is golden and filling is bubbly, about 30 minutes. Let stand 10 minutes before serving. Serve with whipped cream, if desired.
