1. Line a terrine or 600ml serving dish with cling film and mist with low fat cooking spray. Place the salmon in a large bowl and add all the ingredients except the gelatine.
2. Season with plenty of freshly ground salt and pepper and mix well.
3. Sprinkle the gelatine over 4tbsp hot water and stir to dissolve. Stir into the salmon mixture and spoon into the prepared terrine or serving dish. Leave to set for at least 1 hour or until firm.
4. Serve the mousse with crispbreads and lemon wedges.
