1. In a large dutch oven or pot, add olive oil and place over medium high heat. Next add in diced onion, bell pepper and garlic. Saute for a few minutes until onions are tender. Next add in spices: cumin, coriander, garlic powder and oregano. Mix to coat the veggies with the spices, then slowly add in chicken broth, green chiles, hominy, chicken thighs and salt and pepper. Stir well to combine.
2. Bring soup to a boil then reduce heat and simmer uncovered for 25 minutes or until chicken is fully cooked. You’ll want the chicken to be covered by the broth so make sure to stir every so often.
3. Once chicken is cooked, remove with a slotted spoon and transfer to a cutting board to shred with two forks. Add chicken back to the pot then stir in corn, cilantro and juice from 1 lime. Simmer for 5-10 more minutes, then taste and adjust seasonings, if necessary. Enjoy. Serves 4-6.
4. Serve pozole in bowls immediately, top with shredded green cabbage, dollop of Greek yogurt, pinch of fresh chopped cilantro, avocado slices and a lime wedge.

1. In a large heavy bottomed pot or dutch oven, bring the chicken stock to a boil. Add the chicken breasts, cover and simmer over low heat until they’re tender and cooked through, about 25 minutes. Transfer the chicken breasts to a plate and shred the meat, skim the stock, and return chicken back to the stock.
2. In a blender, combine the halved tomatillos, quartered onion, poblanos and jalapenos, garlic, chopped cilantro adding 1 cup water to get the motor going. Blend until smooth, scraping down sides if necessary.
3. In a skillet, heat the oil and add 2/3 of the tomatillo puree ( reserving one third – leave in the blender) and cook over moderate heat, stirring occasionally, until the sauce turns a deep green, about 8-10 minutes.
4. Pour the cooked tomatillo sauce into the chicken stock pot. Add the 3 cups of the hominy (reserving 1 cup) and bring to a gentle simmer over moderate heat. Season with salt, pepper, coriander and cumin, and cook just until heated through. If you cook this too long, it will begin to loose its vibrant color.

1. Preheat oven to 300 degrees F.
2. While the pork is cooking, make the chili sauce. Cut the tops off of all the chilies with kitchen shears. Cut chilies along one edge to open like a book; scrape out all of the seeds. Reserve some of the seeds to finish the soup if you want more heat.
3. Remove the pot from the oven and transfer to the stove. Discard bone. Using two forks, shred the pork (I find it easiest to transfer pork to a cutting board using a strainer, shred, then add back to pot). Add the hominy and chili sauce to the pot. Bring to a boil then reduce to a gentle simmer for 25 minutes, stirring occasionally. Season with 1½ -2 teaspoons salt and either some reserved chili seeds or cayenne pepper to taste for a spicier soup.
