Osso Buco is a traditional Italian dish made with veal shanks that are browned and cooked with onion, garlic, carrots and tomatoes. Veal shanks contain marrow bones that add fantastic flavour (and healthy fats!) to this low-carb dinner dish.
When Osso Buco is made in the Instant Pot, you will not lose as much moisture as if you were to make it on the stovetop the traditional way. I accounted for this by using less liquid ingredients. But in order to bring Instant Pot to pressure, you still need a minimum of 1 to 2 cups of liquid in the pot.
