1. Preheat oven to 350 degrees F. Grease an 8x8 inch baking dish.
2. Combine the almond flour, coconut flour, coconut oil, maple syrup, vanilla extract and salt in a medium-sized bowl.
3. Next, mix the sliced strawberries, rhubarb, maple syrup and corn starch together in a medium bowl until well coated. You can also sub in equal amounts of tapioca or arrow root starch for the cornstarch if you prefer.
4. Press half the crumble mixture into the bottom of the greased baking dish with the back of a spoon or spatula.

Place the topping in mounds on top of the strawberries and rhubarb to create a cobblestone effect then flatten slightly with your hands. Sprinkle the remaining 1/4 cup of shredded coconut over the top.
4. Put the baking dish into your oven and bake for 30 minutes, or until it is hot and bubbling at the sides. Note: check the cobbler after 20 minutes. If the top is browning too much, place some aluminum foil over the top.
