Luckily there are a few sweeteners that work: erythritol, Swerve, tagatose and xylitol ( allulose also works well and there is no caramelisation!). Unlike other low-carb recipes that I've tried, these Healthy Low-Carb Marshmallows can be roasted.
Just a few ingredients are required to make sugar-free marshmallows. For this recipe, you’ll need gelatin, water, sweeteners, sea salt and vanilla extract. If you don’t count the salt and water (they are usually omitted when counting ingredients), you only need four ingredients total.
I would suggest keeping the Keto marshmallows only for a few days as they really get hardened very quickly. It is not that they become bad, but the sugar sweetener hardens so much that you would not be able to enjoy them anymore and therefore the best is to consume them within 1 to 2 days.
