1. In a small mixing bowl toss diced eggplant with ½ teaspoon of kosher salt and transfer to a colander set over a sink. Let the eggplant sit for 10 minutes to strain any excess moisture.
2. In a 10-inch skillet heat olive oil over medium-high heat for 30 seconds. While the oil is heating, pat the chicken dry and season with ¼ teaspoon of salt. Carefully add to the skillet. Brown chicken on all sides, about 6 minutes total. Transfer chicken to a plate, cover, and set aside.
3. Add onions and garlic to the pan and sauté until onions are translucent, stirring occasionally for 2 minutes.
4. Pat the eggplant dry with a paper towel and add drained eggplant to the pan. Continue to sauté until eggplant is tender and slightly caramelized, about 3 to 4 minutes.
