The perfect malt loaf. Stir together the malt extract, treacle, sugar and tea, then add the dried fruit. Leave to soak for 15 minutes. Line a 10x20cm loaf tin with paper and heat the oven to 180C/350F/gas mark four. Whisk together the flours, baking powder and salt, then stir into the mixture to make a soft batter.
Soreen malt loaf contains vitamins and minerals which promotes a nutrient-rich snack. It is reasonably low in fat compared to other cake products, but it contains many sugars, roughly 1 third of your recommended daily allowance of 30g, per ¼ of a loaf.

My Malt Loaf has eggs and uses a wholegrain flour too. I use Marriage’s new flour (which they kindly sent me to trial) Golden Wholegrain Plain Flour which works beautifully. It is like using 50:50 white to brown flour – still light and fluffy when baked but with the extra flavour of a wholegrain flour.
