2. In a medium bowl mix all of the ingredients together until a thick ball of dough forms. Knead two or three times until smooth. Cut the dough in half and refrigerate at least 1 hour.
3. While the dough is chilling, make the filling. Melt the butter over medium heat in a large 10.5” cast iron skillet. Once melted add in the remaining ingredients and bring to a low simmer for 20 minutes until the mixture is slightly thickened. Whisk in the xanthan gum and continue to cook another minute until thick. Remove to a bowl and let cool.
4. Press half of the dough into the skillet and bake for 12-15 minutes. Remove from oven and let cool 5-10 minutes before adding the filling to the crust. Sprinkle the top with the brown erythritol.

2. Melt butter in a 10-inch cast-iron skillet over medium heat; add brown sugar, and cook, stirring constantly, 1 to 2 minutes or until sugar is dissolved. Remove from heat, and place 1 piecrust in skillet over brown sugar mixture. Spoon apple mixture over piecrust, and top with remaining piecrust. Whisk egg white until foamy. Brush top of piecrust with egg white; sprinkle with 2 Tbsp. granulated sugar. Cut 4 or 5 slits in top for steam to escape.
3. Bake at 350ºF for 1 hour to 1 hour and 10 minutes or until golden brown and bubbly, shielding with aluminum foil during last 10 minutes to prevent excessive browning, if necessary. Cool on a wire rack 30 minutes before serving. Serve with butter-pecan ice cream.
