Pour water, tomatoes and chicken bouillon then bring to boil. Add water if necessary 4. Add tamarind leaves and tamarind juice then simmer for 5 minutes over low heat.
Sinampalukang Manok is best paired with Filipino Fried Chicken, Bagnet, Daing na Bangus or Lechon Kawali. Sinampalukang Manok Recipe is a traditional Filipino chicken soup that uses tamarind leaves as souring agent. Pour Canola oil in a large cooking pot then apply heat. Add onion and tomatoes then saute. When it becomes soft, add the chicken.
But unlike it, where different souring agents can be used, only tamarind can be used to sour the soup and the meat can only be chicken. As the name itself means chicken (manok) mixed or infused with tamarind (sampalok). The other difference is the way they are cooked.
In a pot over medium heat, heat chicken oil. Sauté garlic, onions, ginger, tomatoes and tanglad. Add chicken, seasoned with salt. Cook until the juices run clear. Add sampalok pods and water. Bring to a simmer for 20 to 25 minutes. Add finger chilies and sampalok leaves. Season with patis and black pepper.
