A note about pasta: As you can see from the picture, you don't need to use penne. In fact, we prefer the fatter rigatoni tubes because the middles catch more sauce. Rigatoni alla vodka just doesn't have the same ring to it, ya know?
The vodka adds flavor but it cooks long enough that the alcohol boils off. So no worries, you won’t get intoxicated while consuming this dish. You can add shrimp, chicken, bacon, pancetta, or prosciutto. Pasta – I used penne pasta but feel free to use any short-shaped pasta noodles such as rigatoni, rotini, ziti, or farfalle.
