In a large stockpot, stir the pears, sugar, water and lemon juice; to combine. Bring to a boil and cook, uncovered, for 1½ -2 hours until mixture thickens and has a spreadable consistency. Remove from heat. Using a ladle, pour the hot mixture into 7 x sterilized ½-pint jars, leaving ¼-inch space from the top of the jar.
