1. In a large bowl or the bowl of your stand mixer cream together the cup of softened butter with 1 cup packed light brown sugar and 1/4 cup sugar until smooth.
2. Add the 2 large eggs, 2 tablespoons molasses, and 1 tablespoon vanilla extract then mix into the creamed butter and sugar (use 1 tablespoon of your all-purpose flour if desired to keep the wet mixture from looking curdled).
3. Stir in the 1 teaspoon baking soda, 1 teaspoon cinnamon, 1 teaspoon dried orange peel, and 1/2 teaspoon of salt.
4. Mix in the 1 2/3 cups all-purpose flour until all of the flour has been incorporated into the wet ingredients.

4. Bake until the cookies are golden and firm around the edges and set on top, about 9 to 10 minutes. Place the baking sheet on a wire rack and let the cookies cool on the baking sheet for 2 minutes, then transfer the cookies to the rack to cool completely.
