1. Preheat your fan oven to 160°C (325°F) or 175°C (350˚F) if you’re not using a fan oven. Grease and line with parchment paper 8x8 inch (20x20 cm) square tin.
2. Cook strawberries with sugar and squeeze of a lemon juice over a medium-high heat until it reaches boiling. Using a potato masher, mash strawberries. Turn the heat down and let it simmer for approx. 15 minutes or until it thickens. It's better to be thicker than looser, the plan is to lose a lot of water content and have concentrated flavour. I like to have small strawberry pieces here and there, but if you want your jam to be extra smooth then strain it through a sieve or blitz with a hand blender. Cover it with cling film and leave it to cool in the fridge.
3. Make the chocolate icing by melting together the chocolate, butter and milk over a bain maire (a heatproof bowl set over a pan of simmering water). Remove the bowl from the pan of simmering water when smooth, then whisk in the powdered sugar and cocoa powder you have previously sifted to get rid of lumps. In the very end add boiling hot water. You want to get just the right consistency, not too thin to make the lamingtons soak too much of liquid and become mushy, and too thick.
4. Once your cake is cold, trim the edges with a serrated knife and cut the cake horizontally using the same knife or a cake leveler. Fill the cake with strawberry jam and then cut it into 16 or more squares. Then put it in the freezer for 15 minutes to become firm, which will make the dipping in chocolate part easier.

Low Cholesterol And Triglycerides Diet Cookbook - (Beyond Cholesterol & Triglycerides) By …Samantha Bax (Paperback)

Estimated Reading Time: 3 mins
1. Jamie Oliver's Lamingtons - Made the traditional way with flour, eggs and sugar. YUM! If you want to make a tiny tweak to add some goodness, switch the white sugar for the brown caster variety (found in all the big supermarkets) or even coconut sugar.
2. Gluten and Dairy-Free Lamingtons - These ones are made with an almond meal and tapioca flour base. Add a drizzle of rice malt syrup (a 'better' sugar) and they're ready to go.
3. Paleo Lamingtons - These too are made with an almond and tapioca flour base but there are a few extra steps to show you how to pop extra chocolate in the middle.
4. Cannellini Bean Lamingtons - Sounds weird but trust me, a cake made with these beans is actually really yum!
5. Marshmallow Lamingtons - The guys at I Quit Sugar made their own vanilla bean marshmallows (YUM!) and then coated them in chocolate and coconut. How's that for a non-traditional lamington that tastes amazing?
6. 30-Minute Roasted Salmon Tacos with Corn & Pepper Salsa. A honey-and-chipotle glaze gives this roasted salmon a sweet and spicy kick. If you have time, consider grilling or broiling the corn for a few minutes for additional flavor.
7. Chicken & Vegetable Penne with Parsley-Walnut Pesto. Homemade pesto may seem daunting, but in this quick pasta recipe you can make a simple sauce in minutes while the pasta water comes to a boil.
8. Chhole (Chickpea Curry) Made with convenient canned beans, this quick and healthy Indian recipe is an authentic chickpea curry that you can make in minutes.
9. Beef & Bean Sloppy Joes. This healthy copycat recipe of the comfort food classic trades beans for some of the meat to bump up fiber by 7 grams.
10. Creamy White Chili with Cream Cheese. This rich and creamy chili comes together in a flash thanks to quick-cooking chicken thighs and canned white beans.
