1. Peel, core and chop up the Delicata squash into squares. Place squash in a medium pan and cover with water. Set on the stove and bring to a boil. Reduce the heat and cook until the squash is softened, about 20 minutes. Drain and set aside.
2. In a small sauce pan, add the olive oil, grated onion and minced garlic. Cook until the garlic is lightly browned and then add the seasonings.
3. Cook for one minute and then add in the 1.5 cups of broth.
4. Let this simmer for 5 minutes and remove from heat and whisk in the lemon juice.

1. Using a cutting board and knife, chop 2 in of delicata squash by cutting it down the center (to create two half moons), then scoop out the seeds. Slice each piece of squash into 1/4 in pieces, then chop.
2. Place saucepan over medium-low heat. While pan is heating up, remove leaves from kale stalk, wash, chop, and set aside. Finely dice remaining vegetables: 1/2 carrot, 1/2 stalk celery, and 1/4 onion. Once vegetables are chopped, add 1 tsp butter to pan, then add all vegetables (including squash) except kale. Add 1/4 tsp salt and 1/2 tbsp Italian seasoning to vegetables. Stir together and cook until softened.
3. Once vegetables are softened, add 1/2 tsp garlic, 1/4 c white beans, 1 tsp bouillon, and 1.5 cups water to pan. Simmer for 15-20 minutes. Add chopped kale, 1 tsp lemon juice or apple cider vinegar to soup. Stir and cook until kale is bright green. Top with grated parmesan cheese. Serve with grilled cheese or a slice of bread.

1. Preheat oven to 400°F. Line a large rimmed baking sheet with parchment paper. Brush cut sides of squash evenly with 1 tablespoon oil. Place the squash halves, cut-side up, on the prepared baking sheet. Roast until tender, about 30 minutes. Let stand until cool enough to handle, about 10 minutes. Using a spoon, remove the squash flesh from the shells; transfer to a medium bowl, along with any drippings from the baking sheet. (Discard the squash shells.)
2. Heat the remaining 1 tablespoon oil in a large pot over medium heat. Add shallots, garlic and cumin; cook, stirring often, until tender and translucent, 4 to 5 minutes. Increase heat to medium-high. Add the roasted squash-dripping mixture, broth, water and salt; bring to a boil over medium-high heat. Reduce heat to medium-low; cover and simmer until the squash is very tender, about 10 minutes. Remove from heat.
3. Using an immersion blender, process the soup in the pot until smooth with no chunks remaining, 1 to 2 minutes. (Use caution when blending hot liquids. Alternatively, pour half the soup into a blender. Secure the lid on the blender and remove the center piece to allow steam to escape. Place a clean towel over the opening. Process until smooth, about 1 minute. Transfer to a clean saucepan. Repeat the process with the remaining soup.)
4. To serve, ladle 1 cup soup into each of 8 bowls; swirl 1/2 tablespoon pesto into each soup. Sprinkle each with 1 tablespoon pistachios.
