Ceviche – The Essential Peruvian Fish Dish. 1 1 kg white fish fillet Mahi-Mahi. 2 1/2 kg lemon. 3 1/2 kg lime. 4 1 small purple onion. 5 3 medium peppers habanero red peppers. 6 1/2 cup fresh coriander. 7 1 teaspoon ginger grated. 8 Salt to taste.
The perfect Classic Ceviche Recipe – Fresh and vibrant with punch of heat. Serve with tortilla chips or on a salad. Low carb, gluten free and paleo! Place the diced fish in a bowl and cover with 3/4 of the lime juice. Toss well. Cover and refrigerate for at least 1 hour. When ready to proceed, strain off the lime juice.

Using gloves, de-seed the pepper, and mash the pepper with salt, garlic and ginger to make a paste. Soak the onions in salt water to remove bitterness.
