Butterscotch Haystacks are a no-bake Christmas classic with crispy bites of chow mein noodles and marshmallows coated in butterscotch and peanut butter! Line counter tops, or cookie trays with wax paper or parchment paper. Microwave butterscotch chips in large, uncovered, microwave-safe bowl on medium high power for 1 minute; stir until smooth.
To melt the butterscotch chips for haystacks, you can microwave in 15 second increments or use the double boiler method. Place a metal bowl over the top of a pot of boiling water. Be sure the water isn’t touching the bottom of the bowl. Stir the chips until they’re fully melted with no lumps. Can I use ramen noodles for haystacks?
Place chow mein noodles and chopped pecans in a large bowl. Once the butterscotch is melted, pour it over the chow mein candy and pecans and stir until evenly coated. Using a spoon or a small ice cream scoop, drop even amounts of the mixture onto wax paper. If the haystacks are loose, press them together lightly with your hands.
