Glutinous rice flour- also called sticky rice flour. This will give the kakanin its chewy texture. Sugar – To make sure that your Royal Bibingka does not become too sweet, use less if making it with sweetened macapuno. Coconut cream- use full-fat if you want it extra rich and creamy.
Traditional bibingka is cooked in terra cotta pots lined with banana leaves, with hot coals positioned on both top and bottom of the pots as the heat source. As we are baking this bibingka in a regular oven, it lacks the characteristic charring obtained from cooking in these specialized clay pots.
Place prepared banana sheets brushed with butter on top of each pan/mold with the buttered part facing down. Put them back in the oven but this time on the top rack. If using a gas oven, turn on the top heat (grill/broil function). Bake for another 5 minutes or until nicely charred. Once done, remove from oven and brush each Bibingka with butter.
