DirectionsStep1Start off by slicing the beef into strips or chunks.Step2Season the beef with the kosher salt, fresh cracked pepper, and garlic powder, and toss to coat evenly.Step3Preheat a frying pan over medium high heat, and then spray with olive oil spray.Step4Sear the beef on both sides, for a total of 2-3 minutes. It will not cook through here; we are just looking for some color on the outside and to lock in flavor.Step5Remove the beef from the pan and set aside on a plate to rest.Step6Slice the mushrooms and shallots. Add more olive oil spray to the same pan, and add the mushrooms and shallots.Step7Cook for 10 minutes, tossing frequently to prevent burning and sticking. Add more olive oil spray as needed.Step8After 10 minutes, add the Worcestershire and Dijon to the cooked mushrooms and shallots, and whisk to combine.Step9Add the butter and flour, and stir to coat, ensuring to break down the flour and incorporate it throughout the pan.Step10Add the beef broth.Step11Reduce the heat to medium and simmer the sauce for about five minutes, or until the sauce thickens from the flour.Step12Stir in the sour cream and Greek yogurt.Step13Return the cooked beef to the pan, along with any residual juices that collected in the dish as the beef rested. Cook for another 5 minutes for the flavors to combine and the beef to cook through a bit more.Step14Taste the sauce for seasoning; add more salt and pepper as desired.Step15Garnish with fresh chopped parsley for a pop of colorIngredientsIngredients1 ½ poundsLean Sirloin Steak (about 4 steaks)½ teaspoonKosher Salt¼ teaspoonGarlic Powderadd Fresh Cracked Pepperadd Olive Oil Spray2 cupsShallots (sliced, about 4 small ones or 2 large ones)16 ouncesWhite Mushrooms (sliced)2 tablespoonsWorcestershire1 tablespoonDijon1 tablespoonLight Butter (I use Land' o Lakes)2 tablespoonsAll Purpose Flour2 cupsBeef Broth2 tablespoonsSour Cream¼ cupPlain Nonfat Greek Yogurtadd Kosher Salt And Pepperadd Parsley (for garnish)add Pasta (or optional: egg noodles, for serving, also works with potatoes or veggie spirals)See moreNutritionalNutritional389 Calories9 gTotal Fat104 mgCholesterol29 gCarbohydrate1,010 mgSodium48 gProteinFrom sweetsavoryandsteph.comRecipeDirectionsIngredientsNutritionalExplore furtherHealthier Beef Stroganoff III - Allrecipesallrecipes.comSkinny Beef Stroganoff Recipe - BettyCrocker.combettycrocker.comWeight Watchers Hamburger Stroganoff - All She Cooksallshecooks.com15+ Best Healthy Beef Stroganoff Recipes for Weight Losseatthis.comHealthier Beef Stroganoff - As Easy As Apple Pieaseasyasapplepie.comRecommended to you based on what's popular • Feedback

    1. Using a sharp knife, slice steak very thinly and season lightly with salt and black pepper. Spray deep pan or skillet with olive oil spray and turn stove heat on medium-high. Add steak slices to skillet and sear on each side for approx 1-2 minutes on each side. Remove steak from pan and turn heat down to medium.
    2. Add veg oil spray, mushrooms, sliced onion, garlic and flour to pan and stir to combine. Cook for approx 5 minutes until mushrooms are slightly tender.
    3. In a medium bowl, add sour cream. Gradually whisk the milk into the sour cream to avoid the mixture separating. Stir in Worcestershire sauce and dijon mustard. Add the sour cream mixture to the skillet and stir in with the mushrooms and onions. Gradually add in the beef stock and continue to stir until fully combined. Turn heat down to medium-low and simmer for approx 5 minutes.
    4. Add in the steak slices and continue to simmer for 10 minutes. Add salt and pepper and season to desired taste. Meanwhile, add pasta to pot of boiling water and cook until tender. Drain and set aside. Once stroganoff sauce is done simmering, remove from heat and serve over pasta. Enjoy!

    1. Remove any fat and gristle from the roast and cut into strips 1/2-inch thick by 2-inches long. Season with 1/2 teaspoon salt and 1/2 teaspoon pepper.
    2. Melt 1 tablespoon butter in a large skillet over medium heat. Add mushrooms and green onions and cook, stirring occasionally, until mushrooms are browned, about 6 minutes. Remove to a bowl and add 1 tablespoon butter to the skillet. Cook and stir one half the beef strips until browned, about 5 minutes, then remove to a bowl. Repeat with the remaining butter and beef strips. Pour wine into the hot skillet and deglaze the pan, scraping up any browned bits.
    3. Combine flour and 1/4 cup beef broth in a jar with a tightly fitting lid and shake until combined. Stir into the skillet, whisking until smooth. Stir in the remaining broth and mustard, then return the beef to the pan. Bring to a simmer. Cover and simmer until the meat is tender, about 1 hour.
    4. Stir in the prepared mushrooms and the sour cream five minutes before serving. Heat briefly and season with salt and pepper.
