Like so many traditional recipes, alfajores are claimed by many cultures and countries including Argentina, Peru, Brazil and Chile (though many South American countries claim this cookie as their own).
You can keep the alfajores or dulce de leche cookies refrigerated for a week. Notes If you don’t have powdered sugar, you can put regular sugar in the blender and mix it on high speed until you get powdered sugar. Powdered sugar helps the cookies have a smoother texture and a smoother surface.
Bake for about 9 minutes rotating pan halfway through the bake. The alfajores are done when the edges are just turning golden. 6. Add about a teaspoon or two of dulce de leche to the underside of a cookie then sandwich together and press so the filling spreads to the edge.
