Arrange the broccolini in a single layer on the pan. Drizzle with olive oil and season with salt and pepper. Move the pieces around together to coat better, then spread in a single layer again. (Don’t overcrowd the pan.) Roast for about 14-18 minutes, until the broccolini is tender and florets are crispy.
Roasted Broccolini is an excellent recipe to try for the first time. You can add other veggies to the baking sheet if you’re only using a small amount. Great additions would be roasted carrots and broccolini, baked asparagus, roasted Brussels sprouts, or even roasted cauliflower. There’s no wrong way to enjoy this recipe.
