1. Allow salmon to rest at room temperature for 30 minutes. Pat gently with a paper towel.
2. In the meantime, prep seasonings.For Garlic butter: Melt butter in a small saucepan over medium heat. Add garlic and sauté for 30 seconds. Add chicken broth and lemon juice. Cook for 3-5 more minutes to reduce the sauce. Stir in honey. Dill: Combine all ingredients in a small bowl.Cajun seasoning: have ingredients ready. When ready to bake, spread olive oil over filet with a brush and top with desired amount of cajun seasoning.
3. Place salmon, skin side down, on a large baking sheet. Season with salt and pepper and add desired type of seasoning or sauce.
4. Tear off a large piece of tinfoil (enough to fold over the filet and seal). Place salmon, skin side down on lightly greased tinfoil. Season with salt and pepper.

1. Season salmon portions with salt and pepper.
2. Heat a large heavy skillet over medium-high heat. Add in olive oil and heat 30 seconds. Place salmon portions into the skillet, starting with the skin side up. Sear 3 to 4 minutes, then flip over and sear the other side 3 more minutes. Move salmon to one side of the pan.
3. Pour lemon juice into empty area of skillet and in garlic cloves and saute 60 seconds. Spoon garlic lemon juice over salmon and cook until fish is cooked through and flakes easily with a fork.
4. Sprinkle fresh dill on top of salmon portions and serve immediately. Garnish with lemon slices if desired.
