1. Mix the flour, brown sugar, baking powder, salt, cinnamon, and nutmeg together in a large bowl.
2. Use a fork or pastry blender to cut the butter in until it's crumbly (resembling wet sand) and no longer visible.
3. Add the diced apple and toss to coat before adding the Greek yogurt. Continue tossing/stirring everything together until a crumbly dough begins to form (a fork works fine for mixing).
4. Empty the dough onto a flat surface and use your hand to form a ball of dough. Press the dough flat into a rough 6"x4" oval shape about 1/4"-1/2" thick. Don't worry about the perfect size/shape here.

1. Pour the milk into the bowl of a standing mixer, and sprinkle in the sugar and yeast. Stir to combine and then let sit for about 5 minutes to let the yeast begin to come alive. Whisk in the egg, egg yolk, melted butter, vanilla and orange zest.
2. Add the lemon juice to a medium size saucepan. Peel, core, and dice the apples into pieces about the size of a pea. As you chop the apples, add them to the saucepan and toss them around in the lemon juice to prevent them from browning.
3. Cover two large baking sheets with parchment paper and set nearby.
4. Put the powdered and salt in a medium size bowl and add 3/4 cup maple syrup and the vanilla and almond extracts. Stir until smooth. Add more maple syrup if necessary to create a consistency similar to cream. Cover and set aside.
