Bleh. Ravani (rah-vah-NEE), also spelled revani, is a simple cake made from semolina flour infused with an orange juice laden syrup. The bright citrus flavor lifts this cake from the depths of plain and boring to something simply heavenly .
Add a 3-inch cinnamon stick to the syrup mixture along with the orange zest strips. Replace 1/2 cup of sugar in the syrup mixture with 1/2 cup of honey. Instead of toasted almonds, sprinkle the revani with toasted coconut or pistachios. Bake the cake in two (9-inch) cake pans and freeze one for later.
But the most likely hypothesis is that the origin of the Greek revani can be traced back to the rabani of Turkish cuisine, one of the most classic cakes during the time of the Ottoman Empire. Revani was first cooked by Ottoman pastry chefs to celebrate the conquest of Armenia in the 16th century.
