So what are Ranger cookies? Delicious. Okay, okay, I’ll be more descriptive. Ranger cookies are chewy and crunchy all at the same time. They are full of coconut, oatmeal, nuts and (my favorite!) rice krispies cereal. And y’all…they are so dang good.
These low carb rice krispies treats are awesome! What about low carb marshmallows? There are a few recipes out there if you want to make them yourself. They will melt, but they won’t brown unfortunately. That doesn’t matter so much in a rice krispie recipes because you don’t see the marshmallows much.
The most traditional version has shredded coconut in it in addition to the oats, chocolate chips, and Rice Krispies. I never added it to my Ranger cookies, or my Cowboy cookies for that matter! If you love shredded coconut you can add 1 cup to this recipe. Some people also substitute corn flakes for Rice Krispies.
