1. Preheat oven to 375°F
2. Grease the inside of 4, 4-ounce ramekins with butter. Add one tablespoon of half and half or heavy cream into the bottom of each buttered ramekin. Top the cream with one egg and a large pinch of cheese. Season with salt and freshly ground black pepper and sprinkle with chives.
3. Bake eggs 10 to 12 minutes until the yolk reaches your desired consistency (I recommend removing them while the top is still a bit wobbly to ensure a runny yolk. For firmer yolks, cook up to 15 minutes). Serve.

2. Toast the bread slices and butter them. Slice the bread into ¼ to ½ inch cubes, set aside.
3. Heat 1 tablespoon of olive oil in a large saucepan over medium heat. Add the onion slices and cook until softened and slightly brown, about 10 minutes. Add the garlic, tomatoes and fresh thyme. Cook for 5 to 10 more minutes until most of the tomato liquid reduces. Season with salt and pepper.
4. Divide the tomato mixture evenly among the ramekins pushing the mixture up the sides slightly. Top with the toasted bread cubes.
