1. Bring a large pot of water to a boil. Salt the water and add the pasta. Cook according to package directions. During the last minute of cooking time, add the kale.
2. While the pasta is cooking, place the olive oil in a large skillet over medium heat. Add the pancetta and Italian sausage. Cook, stirring occasionally, until the sausage is cooked through, about 4 minutes.
3. Add the red pepper flakes and garlic, and cook for 30 seconds more. Stir in the white wine, scraping the bottom of the pan to loosen any drippings.
4. Place the egg yolks in a small bowl. Add ½ cup of the pasta water, and whisk quickly to combine. This step tempers the eggs to prevent them from scrambling when they are added to the pasta.
