2. In a large bowl, combine the gluten-free all-purpose flour, xanthan gum (if using), quinoa flour, psyllium husk powder, baking powder, instant yeast, sugar, and salt. Whisk well to combine.
3. Add the oil, apple cider vinegar, warm water and eggs, and whisk well for a couple of minutes until you get a dough that resembles cake batter (the dough will be sticky and wet, but it’s totally fine).
4. Transfer the dough to the prepared loaf pan and smooth out the top with a wet spatula.

3. Add the milk, 3/4 cup water, honey and oil. Continue mixing; the dough will start out looking very crumbly and come together in a stiff mass. That's ok! It will soften as the quinoa is added.
4. Spoon in the warm quinoa while the mixer is running. Gradually add all the quinoa and any excess water (there shouldn't be much; most of it should have absorbed in the quinoa).
