1. Roughly chop the jalapeños, onion, garlic, and cilantro and add it to a blender or a food processor fitted with a blade attachment.
2. Add all of the remaining ingredients and process until pureed and smooth to your liking. Serve right away or refrigerate for up to one week.
3. Put all of the ingredients in to a blender or food processor and pulse around 10 times. I like my salsa a bit chunky, so blend for longer if you want a smoother salsa.
4. Serve in a bowl with some extra coriander on top and tortilla chips for dipping.
