2. In a small mixing bowl, combine all your ingredients, except for the sprinkles, and mix well, until just combined.
3. Using your hands, form 12 balls of cookie dough and cover in sprinkles, and place on the lined sheet. Bake the cookies for 12-14 minutes, or until the edges begin to brown.
4. Remove from the oven and let cool on the baking sheet completely.

3. Using a 1/3 cup measure, pour out the batter into the skillet. I was able to make 3 at a time. They are ready to flip when bubble start to form on the top.
4. Serve with butter, sugar free syrup, and chocolate chips.
