Heat a large skillet over medium heat. Add ground beef and break apart with a wooden spoon.
Spray with oil and place tortilla on the pan. On half of the tortilla, place a piece of cheese, pork, ham, pickle and mustard. When cheese is melted, fold the quesadilla in half and flip to heat other side. Remove from heat and cut into 3 pieces.
However, you aren't necessarily limited to using this cheese alone. Pepper Jack, White Cheddar, Chihuahua, and Oaxaca cheese would all be acceptable for use in your Pulled Pork Quesadillas.
