1. Preheat the oven to 400°F.
2. Scrub and rinse the purple potatoes then pat them dry. Cut them into quarters (or evenly sized pieces) and put them in a bowl.
3. Mince or use a garlic press to cut the garlic. In a large bowl, mix the garlic, paprika, olive oil, salt and pepper until evenly coated. If the garlic clumps, just keep stirring until it breaks apart.
4. Transfer to a baking sheet and cook for 25 minutes, or until the outside is browned.

3. Spread potatoes out on the baking sheet and drizzle with 1 tbsp of olive oil. Sprinkle with salt and pepper. Place in the oven for 25 minutes, flipping halfway.
4. While potatoes are cooking, heat remaining olive oil and butter in a pan over medium heat. Once butter is melted add garlic and shallot to the pan. Once shallot has softened (approx. 2 minutes), add thyme, rosemary and thyme to the pan. Cook for an additional 30 seconds, then transfer the mixture to a bowl. Set aside.
