1. Cut each Pork Tenderloin into 3" pieces and using a meat mallet, pound pork pieces until ½″ thick. Toss with olive oil, oregano, dijon mustard and pepper to taste. Marinate 15 minutes.
2. Meanwhile, combine all sauce ingredients except butter in a frying pan. Bring to a boil, reduce heat and simmer until thickened (about 10-12 minutes). Remove from heat and whisk in butter.
3. Preheat grill to high. Grill the Pork Medallions on high 3-4 minutes per side or until just slightly pink inside. Remove from heat, let rest a few minutes.
4. Serve pork medallions with sauce.

1. Place tenderloin in slow cooker. Combine 1 Tbl. soy sauce and next 5 ingredients (through garlic) and pour over pork. Cover and cook on LOW 4 hours or until tender enough to shred. Remove pork and place in a medium bowl, reserving cooking liquid. Let pork stand 10 minutes. Then shred with two forks.
2. Strain cooking liquid through a sieve into a bowl then return to slow cooker. Stir in remaining 3 Tbl. soy sauce, vinegar, and sesame oil. Cover and cook on HIGH 10 minutes.
3. Turn slow cooker off. Add in pork, cooked noodles, carrot, scallions, and cilantro, tossing to coat. Pour mixture into a large serving bowl. Sprinkle with peanuts and fresh cilantro. Serve with lime wedges.
