1. Preheat the oven to 375°F Line a 12 inch pizza pan with parchment paper. Alternately you can do this on a baking dish, lined with parchment paper or a silicone baking mat, or even in a lined casserole dish. Work with what you have.
2. In a mixing bowl, using a hand mixer, combine eggs, cream cheese and seasoning. There will be some small clumps, but it should be mostly smooth.
3. Using a rubber spatula, fold in the parmesan and mozzarella cheeses.
4. Transfer mixture to the lined pizza pan. Spread the mixture out in a thin, even circle. For a thicker crust, make a smaller circle.

2. Cover the dough and allow it to rise until it’s puffy but not quite doubled in bulk, about 60 minutes.
3. Drizzle olive oil onto a 12” pizza pan or a baking sheet; a darker (anodized) pan will yield a crispier crust. Transfer the dough to the pan and press it into a 12” circle. Cover the crust and allow it to rise for 30 minutes.
4. Meanwhile, place a rack in the middle of the oven and preheat the oven to 450°F.
