Loaded with our fave low carb vegetables and ground hamburger, this easy, homemade soup is so rich and savory, you’ll never miss the carbs! Meat and veggies are cooked in a rich, beef and tomato-based broth with garlic and Italian seasoning.
Once the beef is no longer pink, stir in the cauliflower, sweetener, tomato paste, diced tomatoes and green beans. Pour in the beef broth or bone stock until the ingredients are completely submerged in stock, about 8 cups. Bring to a boil, reduce to a simmer and cook for 30 minutes, until the cauliflower is soft.
Hamburger stew is an easy recipe to make in the crock pot or on the stove top. Not only is this low carb hamburger soup keto friendly, it’s suitable for paleo and AIP too! And it’s a flavorful comfort food that’s sure to become a family favorite.
Let the soup simmer for 20 or more minutes. The longer the soup simmers the more the flavors will develop, but if you’re in a hurry 20 minutes is just fine. Whisk in some cream cheese, heavy cream, and grated cheddar until everything is melted and creamy. Serve your cheeseburger soup with crumbled bacon and extra cheddar.
