1. Put flour in large mixing bowl, making a well in the center.
2. Add wet ingredients to well and very slowly mix together with a fork, incorporating only a little flour at a time so it mixes smoothly and evenly. Trust me, the more patient you are with this the better it will turn out.
3. Continue kneading by hand for about 10 minutes, let rest for a half hour covered with a towel. Repeat a couple times until dough is smooth and silky, and just slightly sticky.
4. Shape by hand or with a machine.

4. Finally serve the pasta tossed in a warm sauce or quickly blanch the pasta in boiling water for 1-2 SECONDS before rinsing in cool water. There are no raw ingredients in the pasta so it does not need to be cooked, just warmed up. To store the pasta flash freeze it and then store it in an air tight container in the refrigerator or freezer. Enjoy!

4. Once the gelatin mixture is ready, pour it over the cheese mixture and whisk quickly until it's properly combined. The mixture will start looking like a soft dough. (If the cheese mixture has cooled, microwave it for 10 seconds before you add the gelatin.)
