1. Preheat oven to 450 degrees. In a small bowl, mix together both paprikas, thyme and 1 teaspoon salt. Massage the spice mixture into the pork and let stand at room temperature for 10-15 minutes.
2. In a large, oven-safe skillet, heat the olive oil over medium-high heat. Add the pork and brown on all sides. Transfer the pork to the oven and cook for 10-15 minutes, or until the internal temperature reaches 135 degrees.
3. Transfer the pork to a large plate and cover with foil to keep warm. Add the garlic to the skillet and cook until fragrant, 1-2 minutes. Add the honey and stir for 30 seconds more.
4. Pour in the chicken broth. Cook and stir until sauce is slightly reduced and thickened, 2-3 minutes. Stir in the vinegar, then stir in the butter, once tablespoon at a time. Season with salt and pepper to taste.
