Chicken Sandwich Spread Filipino style is boiled shredded chicken, chop cooked carrots, seasoned with spices and relish blended in creamy mayonnaise. Most of the ingredients to make this chicken sandwich spread are staples in the kitchen.
It’s chockful of shredded chicken, chopped eggs, and crushed pineapple, and makes a delicious as a midday snack or light meal. Growing up, my favorite school baon was a chicken salad sandwich spread generously slathered between slices of white bread (plus yummy cheese cupcake for dessert!).
Ingredients 4 cups cooked chicken, shredded 1 hard boiled egg, peeled and chopped 1 can (8 ounces) crushed pineapple, drained 2 tablespoons sweet relish 1 small onion, peeled and chopped 1/2 cup mayonnaise 1 tablespoon condensed milk (optional) salt and pepper to taste
To make the crispy chicken fillet, season deboned chicken breast with salt and pepper. Coat with flour and deep-fry. To assemble the sandwich, line bottom half of burger bun with lettuce, tomato slice and onion ring. Top with crispy chicken fillet, then spoon garlic ranch dressing over it. Cover with top half of burger bun and serve with fries.
