2. In a small plate prepare the herb mixture by mixing chopped garlic, Herbs de Provence, Italian seasoning and coarse salt.
3. Place the tenderloin in the oven safe dish, such as cast iron, dutch oven or on a baking sheet. Using a knife, make 5-6 small cuts across the tenderloin.
4. Roast at 350 F for approximately 30 minutes, until internal cooking temperature reaches at least 145 F (for pink looking tenderloin) or 160 F (for white looking tenderloin).

1. Trim the pork tenderloin well. Remove the “silver skin” and any trim-able fat. Preheat over to 375° convection or 400° in a regular oven.
2. Salt and pepper all sides. I like to use my Homemaked Seasoning 7:2:2 which also has garlic powder.
3. 1-2 teaspoon vegetable oil in an oven-safe pan (cast iron is good here) over medium-high heat until hot.
4. Sear all sides (3) of the tenderloin for approximately 2 minutes per side. Get close to the final color you want.

2. Sear & Roast: Heat oven-safe pan over medium-high heat. Coat bottom of pan with olive oil. Add pork and cook until browned on one side, about 4 minutes. Flip pork in pan, and transfer to oven. Bake at 375 F until pork is browned and cooked through, about 25 minutes (thermometer inserted in center should read at least 145 F; Note 5). Transfer pork to plate to rest; do not slice yet.
3. Make Sauce: Add all sauce ingredients to now-empty pan over medium heat. Use sturdy wooden utensil to loosen any browned bits stuck to pan. Stir until cheese and butter are melted. Let sauce simmer until thickened, about 5 minutes.
4. Serve: Slice pork into thin slices and drizzle sauce on top. Serve (Note 6).
