4. Add in the water chestnuts and green onions. Cook for 2 more minutes. Season with salt and pepper to taste.

4. Cook until thickened and hot. Break cooked cellophane noodles into small pieces and cover bottom of serving the dish with them. Then pour chicken mixture on top of noodles. Serve alongside lettuce leaves, allowing everyone to take what they want, and then spoon into lettuce leaf and roll (like a burrito) individually.
