Dutch Oven/Oven – Using a dutch oven is my favorite way to cook a keto chuck roast. It’s pretty self-sufficient too once you get it going. First, sear the keto roast on the stove in the Dutch oven and then use the same pot to bake it in. It has a great lid to hold in the steam which cooks the veggies and makes the meat tender.
Prepare the red wine jus in the pan. Place seared chuck roast and veggies in the slow cooker. Cook over low for 6 hours or until the roast is fork tender. Cook times will vary depending on the size of the roast. Allow the dish to cool completely and store in an airtight container for up to 4 days.
