DirectionsStep1Preheat oven to 400 degrees.Step2Combine potatoes, onion, garlic, parsley and eggs in a large bowl.Step3Add in all purpose flour and breadcrumbs. Mix to combine. Try not to over mix. We want our pancakes to be light and fluffy.Step4Add in salt, pepper, and Parmesan cheese. Fold to combine.Step5Line a baking sheet with parchment paper. Spread 1 tablespoon of olive oil onto the parchment paper. Do not wash your hands.Step6With your oiled hands portion out 8 potato pancakes. The thinner the better we want them to be crispy. Not to thin were they fall apart.Step7Place in the oven and cook for 20-25 minutes, flipping halfway.     2. Mix together the potatoes, onions, and garlic in a medium mixing bowl. Next, in a large mixing bowl, stir together the flour, baking powder, eggs and salt. .
    3. Now add the contents of the first bowl to the second bowl and mix together. You can do this using your hands if needed. To make the pancakes, use about 2-3 tablespoon size balls of batter. Flatten this to about 1/4-1/2″ in thickness between your hands and then place it onto the prepped pan. Repeat until your pancakes are formed.
    4. Bake for 15 minutes, flip over, and then bake for 10-15 minutes or until browned. Serve with applesauce and/or sour cream to make this even more authentic!
