3. In a large bowl of an electric mixer, beat 8 egg whites at medium speed until foamy. Stir in the cream of tartar and remaining 2 tablespoons granulated sugar, one at a time. Beat until the whites hold soft peaks. Switch speed to medium-high, then add 1 teaspoon vanilla extract and beat for further 1 minute (the whites should be soft and firm).
4. Using a rubber spatula, fold the cocoa mixture into the egg whites, about 1/3 at a time. Pour batter into prepared greased cake pans.
