Normally Chicken and Mushroom Pasta is not the healthiest dish. Since it is typically made with a lot of heavy cream, it usually is high in calories, fat, and saturated fat. Some recipes have more than 700 calories per serving.
Start by cooking the chicken, onions, mushrooms, and garlic as the recipe directs. Then add the pasta, chicken broth, onions, mushrooms, and garlic to a baking dish covered with cooking spray. Cover with foil tightly and bake at 400 degrees for about 50 minutes.
Be sure to use a large, high-sided skillet so you can easily simmer and stir the pasta. We paired our pasta with chicken sausage, mushrooms, red onion, and collard greens, but you can substitute other types of sausage and vegetables.
