Beef stew is an easy, one dish meal that can be made on the stove, in the oven, or in a slow cooker. Once you do all of the prep work, then it cooks all on its own. Taking out the potatoes you can replace them with peeled radishes, and using xanthan gum instead of white flour you create a low carb version of beef gravy.
Add beef broth. Stir in tomato paste, thyme and bay leaf. Bring to a simmer. Allow to simmer until broth has thickened enough to coat a spoon. Stir in salt and pepper. Transfer to the slow-cooker and stir together with the bacon, beef and the vegetables. Cover the slow-cooker. Cook stew on low 6-8 hours or until meat is fall-apart tender.
