Kuih Dadar, also known as Dadar Gulung or Kuih Ketayap around the Malay Penisula. Learn to make this sweet Nyonya kuih. Cut the pandan leaves into small pieces. Blend this with the water in a food processor until smooth. Strain through a sieve and collect the pandan juice. This step can be made a few hours in advance to save some time.
Kuih ketayap used to be my ultimate fave kuih and in the spirit of ketofying crowd-favourite Malaysian dishes here on KetoJules, I felt it was high time a low-carb version of this popular kuih exists!
These nonya kueh are still being sold at affordable price starting from 80 cents in some coffeeshop so that people of all ages can continue to enjoy them despite their more expensive cake cousins. These nonya kueh come in a myriad of colours such as shades of red, pink, blue, violet, beige, brown, yellow, orange and green.
You first need to soak the glutinous rice before steaming it then pound the pandan leaves, squeeze the juice, beat the egg, make the coconut custard and finally, steam it again. Kueh Salat takes hours to make but is devoured within minutes!
