DirectionsStep1Add your butter and sugars to a bowl and beat until creamy - I use my stand mixer with the beater attachment!Step2Add in your egg, vanilla and red food colouring and beat again.Step3Add in the plain flour, cocoa powder, baking powder, bicarbonate of soda, and salt and beat until a cookie dough is formed!Step4Add in your white chocolate chips and beat until they're distributed well!Step5Weigh your cookies out into eight cookie dough balls - they're about 115-120g each! If you don't want them as big, feel free to make them smaller.Step6Once they're rolled into balls, put your cookie dough in the freezer for at least 30 minutes, or in the fridge for an hour or so!Step7Whilst the cookie dough is chilling, preheat your oven to 180C Fan, or 200C regular! If your oven runs hot, go for 160C-170c.Step8Take your cookies out of the freezer/fridge and put onto a lined baking tray. I put four cookies per tray!Step9Bake the cookies in the oven for 12-14 minutes. I don't personally flatten the cookies, as they flatten enough during baking - however, if you like flat cookies, flatten them a bit before baking.     1. Preheat oven to 410° degrees F. Line 2 baking sheets with parchment paper or silicone liners; set aside.
    2. In the bowl of a stand mixer, cream together the cubed cold butter and granulated sugar together with the paddle attachment on low speed for 30 seconds. Increase speed to medium and continue beating for 30 seconds. Lastly, increase speed to high and continue beating for 30 seconds or until mixture is light and fluffy, scraping down the bottom and sides of the bowl with a spatula.
    3. Beat in the eggs, one at a time, and vanilla, mixing well after each addition. Beat in the red food coloring and cocoa powder and mix on low until incorporated. Lastly, beat in the baking soda, cornstarch, salt, cake flour and all-purpose flour until a soft dough comes together. Mix in both types of chocolate chips on low speed until incorporated. Refrigerate uncovered for 20 minutes to chill.
    4. Using a digital cooking scale for accuracy, use your hands to measure out 6 ounces of dough, forming it into a rough, craggly/rough textured and tall ball (see photo in body of the post for example). Stagger the cookie dough balls about 3" apart from one another, and only do 4 cookie dough balls per baking sheet. Keep any dough not being baked immediately refrigerated.
