2. Whisk flour, sugar, and salt in a medium bowl. Whisk egg yolks, sour cream, vanilla, 1/2 cup butter, and 1/3 cup water in another medium bowl; add to dry ingredients and whisk until smooth. With an electric mixer, beat egg whites to stiff peaks and gently fold into batter.
3. Heat waffle iron until very hot and lightly brush with butter. Working in batches, cook waffles until golden brown and crisp. Stack waffles and serve with desired toppings.

4. In the meantime, heat up your waffle iron. When you are ready, make sure your waffle iron is fully hot. Lightly brush the bottom and top with melted butter. Gently scoop on the waffle batter, so it just covers the surface of the waffle iron. For my waffle iron, it about 1/4 cup of batter per waffle.
