Let’s jump into the mincemeat cookie recipe. Off with the oven. Preheat it to 350F. Get a bowl. Start with 3 and a quarter cups of all-purpose flour. Stir in 1 tsp of baking soda and 1/2 tsp of salt. Cream 1 cup of vegetable shortening and add 1.5 cups of brown sugar gradually and cream until it seems fluffy.
