Here is our version of kabuli Pulao (Afghani Pulao) Recipe. Try it and enjoy this very quick, easy and simple recipe. In pot,add oil and onion (sliced),fry until light brown. Add mutton and saute little. Add garlice paste and fry until meat changes color. Now add water and salt,cook until water is reduced to half and meat is tender.
To cook the pulao without a pressure cooker: Make the broth by boiling the same first ingredients for 1 hour. Follow the same instructions. When cooking rice add all the broth and make sure there is 3. 5 cups of liquid; if not, add more water.
This pulao is a traditional Afghan dish and no celebration is complete without it. Usually it has meat in it too but of course since I made it, it had to be vegetarian. In fact it’s almost vegan too, just soak the saffron in some water or non-dairy milk in place of regular milk and then this will be all vegan.
Remember a good pulao is all about using the right rice. Long rice grains, perfectly cooked and each grain separated from one another = perfect pulao!
